"Being an Israeli pickling is in my blood. In the Middle East, the love for preserved food crosses all cultural and religious boundaries and is shared by Jews and Arabs, Muslim and Christians alike. Walk into any Middle Eastern food market and you will be amazed by the variety of pickles and preserves available. The cool, dark interior is a gastronomic Aladdin cave, stuffed to the brim with exotic spices, oils, preserved vegetables, fish and meats."
Since the publication of my book - Preserving, I have written many articles on the subject for international cookery magazines and web sites. The reaction to the book and articles was overwhelming and readers from all over the world started to send requests for advice and informatio.
This website is the result of those requests. As well as a monthly recipes, readers are invited to send their problems and requests, and use this site as an information centre in all aspects of preservation.
As the site develops, it will offer a range of crafted pickles and preserves, special spice blends and specialized ingredients such as preserving and exotic sugars, curing salts and natural sausage skins. It will also offer equipment such as preserving pans - everything that a beginner or advanced 'picklers' needs.
Keep cooking,
Oded
