Rosh Hashanah Mehren (carrot) Tzimes

1kg peeled carrots sliced into 5mm discs
50g honey, sugar or golden syrup
250ml water
2 tbsp schmaltz, butter, solid vegetable fat or oil (peanut)
2 tbsp flour
1 tsp powdered ginger
Freshly ground pepper
Salt

Method

Simmer the carrots with water, honey and salt until they are almost tender. Heat the fat in a small frying pan, add the flour and fry, mixing all the time, until the flour is pale brown and omits a pleasant nutty aroma. Add to the carrots and mix well season with pepper and cook for further 5 minutes or until the sauce is thickened. If the sauce is too thick, dilute with some orange juice. Serve hot.
